TAMSIN CORCORAN

Tamsin was born and brought up in Kenya.
At seventeen, having just completed a Cordon Bleu course, she landed her first job in a lodge at the foot of Mt Kilimanjaro.

Living, working and cooking for the last 26 years in remote areas of the East African wilderness has resulted in her gaining very broad and innovative cooking skills, and safari knowledge.

She has over the years written a recipe book with plenty of anecdotes about daily life on safari in the bush.

She is as comfortable producing 5 course meals on “hot coals” and using the traditional “tin trunk oven” as she is using all the modern equipment that today’s kitchens provide. However she, like her husband Chris Brennan, is still more at home in the bush making them a formidable combination to be on safari with.

Apart from being the expert bush cook Tamsin also likes to paint the expansive views combined with the extraordinary African light. Her interest in Botany has led her to be knowledgeable on the medicinal values of traditional plants tribes still use to this day.
